Southwest Frittata

30 minute receipe. 10 eggs, sauted veggies, monterery jack cheese, a little half-n-half. Salt and pepper. Cooked on the stovetop until set on the bottom then broiled for a few minutes to melt the cheese on top. Served with cornbread. Fast dinner. The kids weren't too excited about it but we do have a stomach sickness running around here so it may be more the sickness that was talking than the veggies mixed in with the eggs.
